Vegan Mocha Baked Oats

These single-serving chocolate-baked oats are delicious, fluffy, and easy to make! The whipped coffee on top takes this breakfast to another level and you don’t even need to turn on the coffee machine!

Baked oats have become an internet sensation, and for good reason, it's like having cake for breakfast without the guilt! I decided to give them a try since I’m an oatmeal lover, the texture is fluffy and very cake-like, especially since I used quick oats.

During quarantine, I definitely got on the whipped coffee train. I had it every single day for months (I know you did too 😆). It's so delicious and creamy and I thought it would be a perfect topper for my baked oats and I was so right!

This recipe is so simple to make! Simply add all the ingredients for the oats in a blender or food processor, bake, and top with the delicious whipped coffee (also known as Dalgona coffee).

Chocolate baked oats

  1. Preheat the oven to 350 degrees. Add the oats to a food processor or blender and pulse until fine.

  2. Add the rest of the ingredients and blend until you have a smooth batter.

  3. Pour the mix into a greased ramekin, sprinkle the chocolate chunks or chips on top, and bake for 25 – 30 minutes.

Whipped coffee

  1. In a medium bowl add all the ingredients and whisk vigorously until creamy and thick.

  2. Let the oats cool slightly and spoon the whipped coffee on top. Add another sprinkle of chocolate and enjoy immediately.

Ingredients

Chocolate baked oats
  • ½ cup quick oats
  • 1 TBSP cocoa powder
  • 2 tsp baking powder
  • 3 TBSP vegan milk (I used oat milk)
  • 2 TBSP applesauce
  • 1 TBSP melted vegan butter
  • 2 TBSP maple syrup
  • 1 tsp vanilla extract
  • 1 TBSP vegan chocolate chunks or chips
Whipped coffee
  • 1 TBSP instant coffee
  • 1 TBSP granulated sugar
  • 1 TBSP hot water
