Now back to what you came here for, this amazing Vegan Blueberry Pastry! This pastry is ready in under 40 minutes, it’s perfect for last-minute guests, breakfast, dessert, midnight snack, or to literally devour while you stand at your kitchen counter (no judgments here).

My favorite part about this recipe is that I used pre-made dough! I love making things from scratch, but using a few shortcuts from time to time is needed. I used Pillsbury Crescent dough, which is so versatile and can be used for both savory and sweet dishes.

Easy step-by-step instructions

  1. Preheat the oven to 350 degrees. In a small bowl, mix all the ingredients for the filling and set aside.

  2. Unroll crescent dough onto a parchment-lined baking sheet. With a sharp knife make 2-inch cuts along both sides of the dough (check the video for reference).

  3. Add the blueberry filling along the middle and distribute evenly.

  4. Fold the dough strips over the blueberry filling, alternating the sides to make it look like a braid.

  5. Brush the tops with the milk and sprinkle with a bit of brown sugar.

  6. Bake for 25 minutes or until golden on top.

Ingredients

Filling
  • 1 cup fresh blueberries
  • 2 TBSP granulated sugar
  • 1 TBSP corn starch
  • ¼ tsp lime zest
  • ¼ tsp vanilla extract
Dough
  • 1 tube crescent dough (8 oz)
Topping
  • 1 TBSP almond milk or any other vegan milk
  • Brown sugar

Instructions

  1. Preheat the oven to 350 degrees. In a small bowl, mix all the ingredients for the filling and set aside.
