Nice Cream Bites

Happy New Year friends! Today I have a simple and delicious recipe for you that’s perfect if you want to start the year off right with a healthy treat because let’s be honest, we all need a little sweetness in our lives even if we want to start eating healthier.

If you haven’t tried nice cream before, then this is your chance! Nice cream is simply frozen bananas that are blended up with a little bit of liquid until a creamy ice cream-like texture is achieved. A vegan staple for sure!

These bites are very easy to put together, vegan, delicious, and have only 8 simple ingredients. Keep a bag full of these in your freezer and grab one (or five 😉) whenever you need a sweet and healthy treat.

Easy step-by-step instructions with video

  1. In a food processor add the crust ingredients and pulse until the mixture is crumbly. Line a mini muffin pan with 18 cupcake liners and divide the crust amongst each cup, and press down with a tablespoon (check the video for reference), set aside.  

  2. Melt the chocolate and coconut oil in a double boiler until smooth and set aside to cool.  

  3. Add the ingredients for the nice cream to a blender or food processor and blend until creamy (start with 3 TBSP of milk and add the other one if needed). Spoon the nice cream into each cup. 

  4. Add the melted chocolate on top of each cup along with a pinch of sea salt. Freeze for 2 hours or until set.   

  5. To easily remove the bites from the muffin pan, use a toothpick around the edges.

A few tips

  • Remove the bites from the mini muffin pan and store them in a freezer bag or air-tight container for up to a month.  

  • Make sure the melted chocolate isn’t too hot when spooning it over the nice cream. If the nice cream is too soft, simply place it in the freezer for about 10 minutes and then add the melted chocolate. 

  • You can flavor the nice cream however you want! You can add berries, cocoa powder, nut butter, chocolate chips, etc.  

  • If you don’t like salt as a topping, you can also add sprinkles or peanuts.
