Vegan Funfetti Donuts

These baked vegan donuts are soft, cakey, sweet, full of rainbow sprinkles, and super easy to make. I guarantee your kids will go wild!

I am so excited to share this recipe with you today! I wanted to create a “healthier” donut that kids would love to snack on after school – or at any time really. My girls loved these and I’ll be making them for upcoming birthdays since they came out so pretty.  

This recipe is also super easy to make and doesn’t require frying or difficult ingredients. As always, I've included easy step-by-step instructions with pictures and a few helpful tips for making these perfect.

Easy step-by-step instructions  

1. Preheat the oven to 350 degrees and spray your donut pan with oil if it's metal (I used a silicone pan). In a medium bowl combine the applesauce, brown sugar, milk, vanilla, and melted butter.

2. In a separate bowl sift the flour, cornstarch, and baking powder together. Add the dry ingredients to the milk mixture and slowly whisk just until combined (don’t over-mix).  

3. Fold in the sprinkles with a spatula.  

4. Pour the batter into a piping bag or Ziploc bag and fill each donut cavity ½ way. Bake for 18 minutes or until you insert a toothpick, and it comes out clean.

5. Let the donuts rest in the pan for a few minutes before turning them over onto a cooling rack. Let the donuts cool completely before icing.

6. For the icing combine all the ingredients together in a small bowl and whisk until all the lumps disappear. You can add more milk or more powdered sugar if you would like it thinner or thicker.

7. Dip the donuts in the icing and let the excess drip off. Place the donuts on the cooling rack and add the sprinkles immediately – the glaze dries quickly. Enjoy!  

A few tips  

  • Like fried donuts, these donuts should be eaten fresh.

  • Make the glaze right before dipping the donuts since it dries quickly.  

  • If you don’t want these donuts to be too sweet, half the glaze recipe, and instead of dipping the donuts drizzle them with the glaze.  

  • Don’t overfill the donut pan, these donuts rise beautifully!

  • All ovens are different, therefore make sure to keep an eye on the donuts. My donuts baked perfectly in 18 minutes but that might be different for you.  

  • I used a beautiful silicone pan I found at ALDI, cooking times may differ if using a metal pan.   

  • I prefer imitation vanilla flavor; you know the one that’s usually around $2. I can’t stand the taste of pure vanilla extract! Let me know in the comments if you agree.

Ingredients

Batter
  • 2 TBSP applesauce

  • 1 tsp clear imitation vanilla flavor
  • ¼ cup melted vegan butter (cooled)

Glaze
  • 1 ¼ cup powdered sugar
  • 2 TBSP vegan milk
  • A few drops of clear imitation vanilla flavor
  • 1 drop of red food coloring (optional)

  • Rainbow sprinkles for topping
