Vegan Double Chocolate Cakes for Two

What is Valentine’s Day without chocolate?! These Mini Double Chocolate Cakes are so easy to make, chocolatey, fluffy, delicious, and perfect to surprise that special someone in your life!

I know baking can be a little bit intimidating sometimes, so I made this recipe super EASY! No special ingredients or steps and the result is amazing!

A few tips

  • I added Belgian dark chocolate chunks I found at ALDI to my mix, chocolate chips, or even a chocolate bar chopped into pieces can work as well.

  • The perfect topping for these cakes is a ball of ice cream! I am a huge fan of the brand So Delicious for vegan ice creams.

  • The almond milk can be replaced with any other plant milk like oat or soy.

  • My strawberry sauce is delicious and simple to make. I always have frozen berries for smoothies and oatmeal, but if you have fresh strawberries it will taste even better. You can also use blueberries or raspberries.

  • Do not rush the process! Cakes without eggs and dairy take a little bit longer to bake, don’t open the oven before at least 20 minutes to see if they’re ready.

Vegan Double Chocolate Cakes for Two

Ingredients

Chocolate cake
  • 1 TBSP melted vegan butter
  • 3 TBSP unsweetened almond milk
  • 1 TBSP applesauce
  • ½ tsp vanilla extract
  • 2 TBSP brown sugar
  • 3 TBSP all-purpose flour
  • 2 TBSP unsweetened cocoa powder
  • 1 tsp baking powder
  • 2 TBSP dark chocolate chunks
Strawberry Sauce
  • ½ cup frozen strawberries
  • 2 TBSP water
  • 1 TBSP brown sugar

Instructions

  1. Combine the ingredients for the sauce in a small pot and cook on low heat for 10 minutes or until the strawberries are tender. Pulse a few seconds in a food processor or blender and let cool.
  2. Preheat the oven to 350° and grease two ramekins.
  3. In a small bowl combine the flour, cocoa, and baking powder. In a separate bowl mix the butter, almond milk, applesauce, vanilla, and sugar. Add the dry ingredients, mix well and incorporate the chocolate chunks.
  4. Divide the batter into each ramekin and bake for 25 minutes or until you insert a toothpick and it comes out clean.
  5. Serve the cakes warm with a ball of ice cream and a drizzle of sauce.
