A few tips

  • If you don’t have lime juice for the buttermilk you can use white vinegar. I prefer lime juice because it adds a slight hint of flavor.

  • Do not overmix the pancake batter, once the lime juice and the baking soda mix it's important to maintain those bubbles for extra fluffiness.

  • I prefer cooking my pancakes on a non-stick pan and a little butter. This makes those crispy edges we all love!

  • Top your pancakes with berries, bananas, butter, syrup, etc.

  • Make these pancakes a little bit more kid-friendly by adding sprinkles to the batter, chocolate chips, banana slices, etc.

  • This recipe makes 4 - 5 pancakes, feel free to double the recipe.

Vegan Buttermilk Pancakes

Vegan or not these are the best buttermilk pancakes! They're slightly crispy on the edges and fluffy on the inside.

Ingredients

Wet ingredients
  • ½ cup + 1 TBSP plant milk (I used almond)
  • 1 tsp fresh lime juice
  • ½ tsp vanilla extract
Dry ingredients
  • ½ cup all-purpose flour
  • A pinch of salt
  • 1 TBSP white sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
Extras
  • Butter
  • Syrup
  • Fruit for topping

Instructions

  1. To make the buttermilk mix the lime juice, milk, and set aside for 10 minutes.
  2. In the meantime, melt a little bit of butter on low-medium heat in a non-stick pan.
  3. Mix all the dry ingredients together in a small bowl, add the buttermilk and vanilla and mix until combined (do not overmix!).
  4. Pour portions of the batter into the pan and cook until small bubbles form on the top, flip over and cook 1 – 2 minutes more.
  5. Serve with fruits and syrup.
