Vegan Marbled Banana Nut Muffins

These fluffy vegan banana nut muffins swirled with chocolate will be your new favorite breakfast, dessert, or even your favorite midnight snack! A comforting must-try recipe!

I absolutely love baking banana bread! The first post on this website was my delicious Vegan Banana Bread, that recipe is loved by so many! Since I had lots of ripe bananas the other day (or always really - we love them here!) I came up with these delicious muffins and they were a hit with my family and friends. My picky kids loved them and I’m sure you and your family will too.

These muffins are also super EASY to make, they require simple ingredients and take only about 20 minutes to prepare. Make sure you check out my step-by-step instructions with pictures below!

Easy step-by-step instructions  

1. Preheat the oven to 350 degrees. In a small bowl mix together ¾ cup of almond milk, vinegar, melted butter, and vanilla extract, set aside.

2. Mash the bananas in a larger bowl until you form a puree and mix in the sugar.

3. Add the milk mixture to the bananas and whisk until well incorporated.

4. Add the flour, baking powder, baking soda, walnuts, and slowly whisk until you have a smooth batter.

5. In a separate small bowl add ¾ cup of the batter, the cocoa powder, 1 tablespoon of almond milk, and mix well.  

6. Spoon the chocolate mixture onto the batter in different spots.

7. Slowly swirl with a knife to create the marble effect.

8. Line a cupcake pan with 12 baking liners. With the help of an ice cream scoop or spoon fill the cupcake liners about 3/4 full, and bake on the top rack for 25 minutes or until you insert a toothpick and it comes out clean.

A few tips  

  • You can bake the batter in a loaf pan instead. Bake for 50 – 55 minutes or until a toothpick inserted in the middle comes out clean.  

  • Before I prepare the muffins, I set up all the ingredients first. This makes the process easier and faster.  

  • Don’t swirl the two batters too much to achieve the marble effect.  

  • When mixing the dry and wet ingredients, do not over-mix.   

  • You can substitute the walnuts for any other nut, or leave them out if you prefer.

Ingredients

  • ¾ cup unsweetened almond milk
  • 2 tsp white vinegar
  • ¼ cup melted and cooled vegan butter
  • 1 tsp vanilla extract
  • 2 medium ripe bananas
  • ½ cup granulated sugar
  • 1 ¼ cup all-purpose flour
  • 1 TBSP baking powder
  • 1 tsp baking soda
  • ¼ cup chopped walnuts
  • 2 TBSP unsweetened cocoa powder
  • 1 TBSP unsweetened almond milk

  6. Line a cupcake pan with 12 baking liners. With the help of an ice cream scoop or spoon, fill the cupcake liners about 3/4 full, and bake on the top rack for 25 minutes or until you insert a toothpick and it comes out clean.
  7. Let cool in the pan for 5 minutes and transfer to a cooling rack. Enjoy!
