Strawberry Kiwi Popsicles

It has been so HOT these days in New York and I’ve been wanting to make a fruity treat to beat this heat! I bought beautiful strawberries and kiwis at ALDI and thought they would be perfect to make popsicles.

Everyone from kids to grownups love popsicles and they are insanely easy to make. I chose a classic strawberry and kiwi combination, but you can use any fruits you have at home.

I offered these yummy popsicles to my daughter and her friends and they loved them! They were a perfect treat for the 90-degree weather we had.

Easy step by step instructions

1. In a blender or food processor add the strawberries, lime juice, and agave.

2. Blend until smooth and taste to see if you like it.

3. Distribute the mix between 6 wells of a popsicle mold (my molds hold 1/3 cup each). Place in the freezer for 30 – 40 minutes or until a little firm on top.

4. While the strawberry mix sets blend the kiwis, lime juice, and agave until smooth.

5. Taste and then pour over the strawberry mix.

6. Freeze for 4 hours or until frozen solid.

How can I make these without a popsicle mold?

If you don’t have a popsicle mold, follow these steps:

  • Pour the mix into the cups you choose (make sure they’re freezer-safe).

  • Place plastic film or aluminum foil over each cup.

  • Cut a small hole in the middle of the aluminum or plastic film and place a wooden popsicle/craft stick inside.

The easiest way to make these is with a popsicle mold. You can find so many different popsicle molds online or in stores. I found my mold in Marshalls for only $4.

A few tips and ideas

  • You can use fruits like mangoes, blueberries, peaches, pineapple, watermelon, cantaloupe, etc.

  • If you want a smoother consistency, you can add extra liquid to your mix. You can use juice or vegan yogurt.

  • I decided to use agave nectar since I love the flavor of it in drinks, you can substitute it for sugar or any other sugar replacement of your choice.

  • My popsicle molds hold 1/3 cup each. Make sure to measure how much mix your mold holds and adjust the recipe. I found that 1 ½ cups of chopped fruit yielded 1 cup of mix once blended.

Ingredients

Strawberry Mix
  • 1 ½ cups of chopped strawberries
  • The juice of half a lime
  • 1 TBSP agave nectar
Kiwi mix
  • 1 ½ cups of chopped kiwis (3 kiwis)
  • The juice of half a lime
  • 1 ½ - 2 TBSP agave nectar

Instructions

  1. In a blender or food processor add the strawberries, lime juice, and agave. Blend until smooth, taste to see if you like it, and distribute it between 6 wells of a popsicle mold (my molds hold 1/3 cup each). Place in the freezer for 30 – 40 minutes or until a little firm on top.
  2. While the strawberry mix is setting prepare the kiwi mix.
  3. Blend the kiwis, lime juice, and agave until smooth. Taste and pour over the strawberry mix. Freeze for 4 hours or until frozen solid. Enjoy on a sunny day!
