Six Ingredient Vegan Pancakes

During the week we usually have the same breakfast every day, usually avocado toast or oatmeal. On the weekends, I love making something a little more special like pancakes since I have more time.

These pancakes are so easy to make! They’re also gluten-free and vegan.

Ingredients you need

For this recipe, you only need 6 ingredients.

  • Quick cook oats (you can substitute for old fashioned oats, but I rarely buy those)

  • Baking powder

  • Stevia or sugar

  • A ripe banana

  • Plant milk (I like using unsweetened vanilla almond milk)

  • Vanilla

Toppings

I topped mine with maple syrup and homemade berry jam. I made the jam with frozen mixed berries, sugar, and a bit of water.

Other yummy toppings:

  • Sliced bananas

  • Whipped non-dairy cream (I’ve yet to get my hands on one)

  • Nuts

  • Chocolate chips or chocolate sauce (yum!)

Six Ingredient Vegan Pancakes
Serves: 6 small pancakes

Ingredients

  • 1 cup quick cook oats
  • ½ tsp baking powder
  • ½ tsp powdered stevia or 2 tsp sugar
  • 1 medium ripe banana
  • ½ cup unsweetened vanilla almond milk
  • 1 tsp vanilla extract

Instructions

  1. In a food processor add your oats and pulse until it forms a flour.
  2. Add the rest of your ingredients and blend until your batter forms.
  3. Cook on a non-stick pan with a little butter until golden and serve with syrup and homemade jam if you like.
